Please remember to go through your closets and donate any old coats, jackets, sweaters, or sweatshirts to Coats for Kids and Adults. It’s a simple way for you to assist us in getting ready for our December deliveries. Simply bring the garments to any of our north county cleaners and mention Coats for Kids to have them cleaned for free. When the winter days come, as they usually do, our committee members will pick them up and deliver them to our north county friends in need.

2 boneless, skinless chicken breasts Ingredients: (about 1 pound) 2 tsp olive oil (extra virgin) Salt black pepper, freshly ground 16 slices ciabatta rills Tomatoes Roasted in the Oven 12 inch strips of baby arugula leaves 1 cup baby arugula leaves, coarsely chopped a quarter pound Asiago cheese shredded using a shredder with big holes
Preheat the oven to 350 degrees Fahrenheit. Chicken breasts should be washed and dried. Place the chicken on a baking pan lined with foil. Using a teaspoon of olive oil, rub each one. Salt & pepper to taste. Preheat oven to 350°F and bake for 12 to 15 minutes, or until breasts are opaque and firm to the touch. Cut chicken into 1/8-inch pieces by slicing across the breasts. Preheat the panini press. The domed tops of ciabatta rolls should be cut off and saved for future use. The thickness of the rolls should be approximately 1 inch. Horizontally split rolls Spread an equal layer of sliced chicken on the bottom half of the ciabatta. After that, add a layer of oven-roasted tomatoes. Before adding the chopped arugula, season with salt and pepper. Give each one a squeeze of lemon juice before sprinkling grated Asiago on top. Sandwiches should be covered with ciabatta tops and placed two at a time on a hot grill. Sandwiches are done when the scent of cheese can be detected, which takes approximately 3 minutes.
Note: Where is the panini grill? In a big skillet, place the sandwich. Place a brick on top of the sandwich after wrapping it in foil.
